chocolatey pumpkin cookies w/ brown sugar icing

1 c sugar
1 c shortening
1 c canned pumpkin
1 egg
1 tsp vanilla extract
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 c simi-sweet chocolate chips

Beat sugar & shortening at medium speed w/ an electric mixer until creamy. Add pumpkin, egg & vanilla, beating until blended; set aside.

Combine flour, baking soda, & cinnamon in a small bowl; gradually add to shortening mix, beating well. Fold in chocolate chips.

Drop onto baking sheets. Bake at 350 degrees for 15-20 mins or until golden brown on bottom. Remove to wire racks to cool. Drizzle w/ warm frosting.

FROSTING:

1/2 c packed brown sugar
3 Tbsp butter
3 Tbsp milk
1 1/2 c powdered sugar

Combine borwn sugar, butter & milk in a small saucepan. Bring mixture to a boil over medium heat; boil 2 min. Remove from heat. Add powdered sugar & beat at medium speed w/ an electric mixer until smooth.

Recipe was easy & fast. Cookies turned out great & were a big hit w/ the family & my co-workers. Only suggestion; make frosting when last sheet of cookies are baking. It's easier to drizzle when fresh & warm. Enjoy.
