Applesauce Cookies

Feeling a little blue today, poured myself a steaming cup of my spiced tea and wondered what would go good w/ it... which lead me to this very simple applesauce cookie recipe. Of course I found the recipe but made my own little changes to them. So here's my version...

2 3/4 c all-purpose flour
1 1/2 c packed brown sugar
1 c chunky applesauce
1/2 c butter
1 tsp kosher salt
1 tsp ground cinnamon
1 tsp vanilla
1/2 tsp baking ssoda
1/4 tsp ground cloves
2 eggs
1 c carmel chips
(1 c raisins and nuts optional)

1) In large bowl, mix all ingredients w/ spoon. (If dough is soft, cover & refrigerate.)

2) Heat oven to 375d. On ungreased cookie sheet, drop dough by rounded teaspoons about 2 inches apart.

3) Bake 8 to 10 min or until almost no indentation remains when touched. Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 min.

4)Sprinkle powdered sugar on top right before serving.
